Oyster Recipes

Not sure what to do with your oysters?

Oysters can be eaten fresh (natural) or cooked – depending on your personal preferences and your imagination.

Here are a few of our favourite recipes for you to try.

Oysters Alaska

Ingredients

  • 4 doz SA Premium Oysters natural in shell
  • 1 tablespoon Flora light margarine
  • 1/2 cup of skim milk
  • 1/2 cup shallots
  • 170 g cooked crab meat
  • 1 heaped tablespoon plain flour
  • 1/4 cup of white wine
  • 1 tablespoon of chopped parsley
  • 1 cup reduced fat cheese
  • Pepper to taste

Method

  1. Melt margarine in a medium saucepan
  2. Stir in flour with a whisk, slowly add milk while stirring
  3. Add wine, shallots, parsley and crab meat, mix well and add pepper to taste
  4. Place oysters on baking tray, spoon sauce evenly over each oyster and top with grated cheese
  5. Grill until golden brown

Chilli and Cheese

One dozen freshly shucked SA Premium oysters
Grated cheese. Placed on top of oyster
½ teaspoon of Sweet Chilli Sauce on top of cheese
Place in pre-heated grill or oven until golden on top

Creamy Garlic

Ingredients

  • One dozen freshly shucked SA Premium Oysters
  • Half cup grated cheese
  • Half cup cream
  • 1 tsp crushed garlic
  • Juice of one lemon
  • 1 tsp fresh breadcrumbs

Method

  1. Mix all ingredients except breadcrumbs together and spoon on top of oysters
  2. Sprinkle breadcrumbs on top and place in pre-heated grill or oven until golden brown

Fried Oysters

Ingredients

  • 2 dozen freshly shucked SA Premium Oysters on the shell
  • 1 egg
  • 2 tablespoons cream
  • plain flour seasoned with pepper and salt
  • SAO biscuit crumbs crushed finely
  • butter
  • lemon wedges
  • parsley

Method

  1. Remove oysters from shell
  2. Place shells on a baking tray to heat
  3. Beat cream and eggs together on a large dinner plate
  4. Coat oysters with seasoned flour, then dip into egg mixture and lightly coat all over with biscuit crumbs
  5. Place oysters in fridge for 1/2 hour to harden
  6. Melt butter over low heat
  7. Place oysters in butter and cook slowly until coating is crispy (Approx 7 minutes) then drain
  8. Remove oyster shells from oven with tongs
  9. Put oysters back in shells and arrange on a plate
  10. Garnish with lemon wedges and parsley

Steamed Oysters

Ingredients

  • 1 doz SA Premium Oysters
  • 1 teaspoon of finely grated ginger
  • 1 small red chilli sliced thin
  • 1 tablespoon of rice wine vinegar
  • 1 tablespoon mirin
  • 1 teaspoon of light soy sauce
  • A few drops of sesame oil

Method

  1. Place oysters in a large steamer basket and place over large saucepan of boiling water.
  2. Steam for 2 minutes
  3. Combine remaining ingredients in a small bowl stirring well to combine
  4. Drizzle each oyster with a little of the sauce and serve on a large rock salt covered platter.

Oyster Patties

Ingredients

  • 24 freshly shucked SA Premium oysters
  • 2 cups fresh bread crumbs
  • one diced onion
  • two eggs
  • two tbsp hot sauce
  • salt and pepper and juice of two lemons

Method

  1. Mix altogether and let stand in fridge for ½ hour.
  2. Roll in patties and then bread crumbs.
  3. Fry in butter until golden brown.
  4. Enjoy with a green side salad with Mayonnaise and sweet chilli sauce on the side.

Oyster Chowder Soup

Ingredients

  • 2 doz SA Premium Oysters
  • 950 ml of fish stock
  • 1 cup flour
  • 1 teaspoon chopped parsley
  • 2 cups diced potatoes, boiled
  • 2 cups of onions, chopped
  • 350 ml heavy cream
  • 1/2 cup margarine
  • Salt and pepper to taste

Method

  1. Saute onions and 1/4 cup margarine for 2-3 minutes, add SA Premium Oysters and liquid, simmer 4-5 minutes
  2. Add fishstock and bring to boil, reduce heat and simmer for about 8 minutes
  3. Mix flour with margarine, add to mixture to thicken
  4. Simmer for 6 minutes, add cream, parsley and potatoes, simmer for 3 minutes
  5. Salt and pepper to taste.

Panko Crumbed Oysters

Ingredients

  • One dozen freshly shucked SA Premium Oysters
  • Panko Crumbs
  • Plain flour
  • Two eggs lightly beaten

Method

  1. Roll oysters in flour then in the eggs
  2. Finish of by rolling in the panko crumbs
  3. Shallow fry in oil or butter until golden brown
  4. Place some mayonnaise and caviar or sweet chilli sauce on top
  5. Eaten by themselves or with a green side salad
